BANANA COCONUT CRUNCH MUFFINS

I love how a simple recipe of muffin turned into an healthy recipe.  All the ingredients work well together and not a single ingredient overpowers other .  A great combination of coconut which adds little sweetness while  granola and nuts add  crunchiness.

I love it when you all try my recipes and then creat your on version of them .

INGREDIENTS

  • 1 ½ cup all-purpose flour (209grms)
  • 1 cup castor sugar (204grms)
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 4oz (1stick)  butter
  • 1 no. egg
  • ½ cup + 2 tbsp milk
  •  ½ cup ripe  bananas diced
  •  ½ cup mashed bananas
  • ½ cup diced walnuts
  • ½ cup granola
  • ½ cup coconut shredded + extra for topping

PROCEDURE

  • Pre-heat the oven to 180C. line a 12 cup muffin tin with paper liners.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine flour, sugar, baking powder, baking soda and salt.
  • Add the melted butter and blend.
  • Add the eggs, milk, vanilla and mashed bananas to flour and butter mixture and mix well.
  • Fold the diced bananas, walnuts, granolas and coconut into the batter.
  • Spoon the batter into the muffin cups, filling each ¾ full. Top with extra coconut, if desired.
  • Bake 24-26 minutes, or until a toothpick inserted into the center of muffin comes out clean.
  • Allow to cool in the pan for 10 minutes, and then transfer to a wire rack to cool completely.
