BANANA COCONUT CRUNCH MUFFINS
I love how a simple recipe of muffin turned into an healthy recipe. All the ingredients work well together and not a single ingredient overpowers other . A great combination of coconut which adds little sweetness while granola and nuts add crunchiness.
I love it when you all try my recipes and then creat your on version of them .

INGREDIENTS
- 1 ½ cup all-purpose flour (209grms)
- 1 cup castor sugar (204grms)
- ½ tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- 4oz (1stick) butter
- 1 no. egg
- ½ cup + 2 tbsp milk
- ½ cup ripe bananas diced
- ½ cup mashed bananas
- ½ cup diced walnuts
- ½ cup granola
- ½ cup coconut shredded + extra for topping
PROCEDURE
- Pre-heat the oven to 180C. line a 12 cup muffin tin with paper liners.
- In the bowl of an electric mixer fitted with the paddle attachment, combine flour, sugar, baking powder, baking soda and salt.
- Add the melted butter and blend.
- Add the eggs, milk, vanilla and mashed bananas to flour and butter mixture and mix well.
- Fold the diced bananas, walnuts, granolas and coconut into the batter.
- Spoon the batter into the muffin cups, filling each ¾ full. Top with extra coconut, if desired.
- Bake 24-26 minutes, or until a toothpick inserted into the center of muffin comes out clean.
- Allow to cool in the pan for 10 minutes, and then transfer to a wire rack to cool completely.
